We see loss of taste and smell in celiac disease due to nutrient deficiencies resulting from malabsorption, specifically zinc in smell and vitamins B3, B12 and zinc in taste. Not sure if this will apply if he lost them suddenly, but worth checking into. Bacterial infections/antibiotics are known to trigger acute celiac disease.
