Recipes: Allergy/Soy-Free Mexican Chicken
-cut up chicken breast
-red bell pepper
-1 tsp chili powder
-1/4 tsp ground cumin
-1 can corn, drained, if using canned (optional)
-1 can black beans, rinsed and drained (optional)
Saute chopped onion, garlic, and red pepper a few minutes in olive oil. Add chicken breast chunks. Saute until chicken is almost done, then add chili powder and ground cumin. Stir and simmer a few minutes.
If using, add drained corn and black beans.
Squeeze fresh lime juice and serve.
Use dairy, soy, corn, wheat and/or gluten free ingredients as needed. To make corn free, omit corn. Verify ingredients of chili powder for added corn and/or gluten ingredients.
