Fast absorption carbohydrates (there are also slow absorption carbohydrates) in our food mean that the pancreas has to work hard, and thus produces more insulin. If the pancreas is over-stimulated over a long period of time, it may become "exhausted."
Your pancreas can also become compromised if it is deluged by acids – acids not only from fast absorption carbohydrates we consume, but also from sugars, excess fats, high acid forming foods, and uric acid (all very common in our modern diets), as they keep going from the stomach directly to the pancreas.

You will probably say that it will be hard to make a menu for you because all the food you today is on the list of Acidifying Foods...BUT THAT IS THE ROOT CAUSE OF TYPE-2 DIABETES!!!

Change your eating habits. I do not suggest to become vegetarian over night (even though it would be ideal) rather learn to balance your food. Chicken is less acidifying than meet therefore choose to eat chicken instead of meat. Fish is less acidifying compared to chicken therefore choose to eat fish if you can not survive with vegetables only. Just make sure to reduce amount of dairy foods and have a big bowl of fresh vegetables every time you eat a small peace of meat, chicken or fish.

Be aware of drinks you drink...Forget soft drinks, coffee choose instead water with lemon/lime juice or green/white tea.
Forget chocolade bars, change them to cereals, fresh fruits or nuts.

You have to understand that your pancreas has not stopped producing insulin just overnight. It took years of acidifying nutrition to weaken your pancreas. Thus it will take some time for your body to show positive response to change of your diet...
