Is it true osteoarthritis? Gluten sensitivity can cause inflammation of the tissue in a joint or multiple joints. Celiac disease complications include monoarthritis and other forms of arthritis.
I have seen many people improve when they removed gluten from their diet, including my mother.
Your aunt should be tested for celiac disease before attempting the gluten free diet as once you go gluten-free the antibodies the tests measure disappear. Of course, if her doctors discount the idea out of hand as they often do, then go for the diet.
