Amaranth belongs the Spinach family group and more than 60 species of
amaranth are found, and the three varieties are very popular,
botanically known as Amaranthus Gangeticus and generally called as
China Spinach. Amaranth leaves, grains are being used as food source by
the people of all countries for its potential health benefits. Amaranth
leaves found in red, bicolor and green, are mostly used in cooking
especially in South India for its nutritional benefits, flavor and
taste. In Western countries, including Mexico, America, Argentina,

including India, as they were recognized as gluten free food source,
and its health benefits of Amaranth varieties, which are commonly used
in cooking by the populace.

Amaranth is also called by different names by the various regions of
the world. In India it is called as cholai, marsa, thotakoora, tamri
baji, whereas Greeks called it as `everlasting food, while Aztecs
called it as food of immortality, and in India it is called as
"King of grain or Rajgeera'. Having recognized the nutritional
value of Amaranth, people from all parts of the world began to use it
in cooking and in food items since long back ago. Even now it is very
popular as it is being used in many food items in combination with
other food varieties by almost all the people. Amaranth leaves and
grains are being cultivated commercially in all regions of the world
and it is made available in all seasons.

Amaranth Nutritional value; Amaranth comprises good proportions of
Phosphorous, Calcium, Magnesium, Omega-3 fatty acids, and other
minerals namely copper, potassium, sodium, iron, manganese, zinc in
small proportions, and contains proteins, complete set of amino acids
that includes potential amino acid lysine, and lacks in problematic
protein known as gluten, dietary fiber, and vitamins of B9, B6, Vitamin
C, Vitamin A, Vitamin K, riboflavin, folates, and carbohydrates,
saturated fats and zero cholesterol and with high calorific value,
which contribute to promote good health and prevent diseases.
