[AlternativeAnswers] RE: Contamination Outside or Inside the Egg Shell

 

The FDA is, once again, missing the point.

Eggs themselves are not dangerous. Eggs produced in a factory farm setting are the problem.

Hens in these giant operations live in tiny cages stacked high with other hens. These cages are so small that the hens cannot even stretch their wings. They have no choice but to defecate in the same cage where they lay their eggs. Hens above also defecate on the hens below.

The eggs are so covered in filth that they have to be cleaned. The cleaning strips away the protective layer that is naturally on the egg. It is replaced with a coating of mineral oil (petroleum) to try and keep the bacteria out.

The best solution is to shut down these horrible operations and get back to farming methods that keep the animals healthy. Healthy animals produce healthy food for us to eat.

Support local farms that let their hens free range. Or get a few hens of your own. Chickens keep themselves and their eggs very clean when given the opportunity.

A small flock is very easy to care for and provides other benefits like weed and bug control as well as excellent fertilizer.

I have a small flock that free ranges and receives organic soy-free grain. They also get organic fruit and veggies scraps from my garden. I eat raw eggs on occasion in various recipes and never give it a second thought. These are my eggs, and they frequently don't get put in the fridge for at least a few days.

Remember the original purpose of eggs -- to make more chickens. The eggs are meant to sit under a mother hen and stay at about 100 degrees F for about three weeks. If bacteria was able to get into the egg, the chick would not live. Eggs are naturally resistant to bacteria.

So once again, the eggs themselves aren't the problem. The way we produce them is. Buy locally from people who are doing right by their animals. It's a win-win because the food is nutritionally superior.
