Good Morning!

Recipe: Seaside Ceviche

I first tried ceviche 15 years ago when I was in the coastal town of Salinas in Ecuador. This delectable seafood dish was served in a bowl. As I took my first bite I could savor the meaty shrimp along with a sharp lime pucker! The hint of onion and tomato and a pinch of garlic meandered over my taste buds bringing a big smile to my face. Since then, I have discovered a variety of different versions using fish, crab or octopus depending on which city I was in. From Puerto Rico and Santo Domingo to Madrid and Mexico, there are as many variations as there are seafood.

I have simplified my version down to the essentials, which is easy, healthy and takes about 20 minutes to make!

Ingredients

-I start with 1 pound of cook/peeled shrimp
-1 large red onion
-1 large tomato
-1 large handful of cilantro
-3 or 4 limes
-a pinch of sea salt or a tsp of adobo spice
-1 Tablespoon cold pressed virgin olive oil
-4 cups brown rice

Directions

1. Start your rice. 8 cups of water, bring to a boil and add 4 cups of rice. I add just a tsp. of olive oil to the water.

Clean and take the tail off 1 pound of shrimp and place it in a large bowl.

2. Cut up an onion in small little squares and boil for 3 minutes.
Strain the water from the onions and add it to the shrimp.

3. Dice the tomato up in tiny squares as well and add it to the shrimp.

4. Chop the cilantro up finely and add to the shrimp.

5. Juice your limes and pour them over the shrimp mixture.

6. Add the remaining olive oil and then add a pinch of sea salt or adobo to taste. Stir all the ingredients until they are mixed well.

7. I like to refrigerate the ceviche mixture for about 2 hours or until cold.

When you are ready to eat:

I take about a cup of cooked rice and warm it up so the rice is hot.
Put the rice in a bowl.

I then take the cold ceviche and add about two tablespoons (or more) over the hot rice!

Then, savor and enjoy.

In Ecuador, the ceviche is served with plantain chips and/or roasted (or toasted) pieces of corn! A winning combination!!
